Clarion County Recipe of the Day: Meatball Tortellini Soup
Serve this quick and hearty soup with a garden salad and garlic rolls!
Meatball Tortellini Soup
1 – 14-1/2 oz. can reduced-sodium beef broth
12 – 1/2 oz. frozen fully cooked Italian meatballs
3/4 cup fresh baby spinach
3/4 cup stewed tomatoes
1 – 11 oz. can Mexicorn, drained
3/4 cup frozen cheese tortellini
Dash salt and pepper
~In a large saucepan, bring broth to a boil. Add meatballs. Reduce heat; cover and simmer for five minutes.
~Add the spinach, tomatoes, and corn; cover and simmer for five minutes.
~Add the tortellini, salt, and pepper; cover and simmer for three minutes (or until tortellini is tender).
~Makes four servings.
