Clarion County Recipe of the Day: Buttermilk Smashed Potatoes

Serve this great-tasting side dish with your favorite pork recipe!

Buttermilk Smashed Potatoes

Ingredients

4 pounds Yukon Gold potatoes, peeled and cubed
1/2 cup butter, softened
1-1/4 teaspoons salt
1/4 teaspoon pepper
3/4 to 1 cup buttermilk
Toppings: crumbled cooked bacon, sour cream, and thinly sliced green onions

Directions

~Place potatoes in a 6-quart. pot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10 to 15 minutes (or until tender).

~Drain; return to pan. Mash potatoes, gradually adding butter, salt, pepper, and enough buttermilk to reach desired consistency.

~Serve with toppings.

~Makes eight servings.
