This casserole is a great covered dish for a family gathering!

New Orleans-Style Scalloped Corn

Ingredients

4 teaspoons butter
1 large onion, finely chopped
1 large sweet red pepper, finely chopped
4 cups frozen corn
2 large eggs
1 cup fat-free milk
1 tablespoon sugar
1 to 2 teaspoons hot pepper sauce (to taste)
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/4 cups crushed reduced-fat butter-flavored crackers (approximately 30 crackers)
5 green onions, sliced

Directions

~Preheat oven to 350°.

~In a large skillet, heat butter over medium-high heat. Add onion and pepper; cook and stir until tender. Add corn; heat through, stirring occasionally. Remove from heat.

~In a small bowl, whisk eggs, milk, sugar, pepper sauce, thyme, salt, and pepper; add to corn mixture. Stir in crushed crackers and green onions.

~Transfer to a 2-qt. baking dish coated with cooking spray. Bake, uncovered, 35 to 40 minutes (or until a knife inserted in the center comes out clean).
