Here’s a perfect recipe for the upcoming holiday weekend!
Slow-Cooked Corn on the Cob
4 medium ears sweet corn, cut into 2-inch pieces
1 – 15 oz. can coconut milk
1 medium onion, chopped
1/4 cup butter, cubed
6 fresh thyme sprigs
2 garlic cloves, minced
1 bay leaf
3/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup fresh cilantro leaves, chopped
2 green onions, sliced
~In a 5- or 6-qt. slow cooker, combine first nine ingredients. Cook, covered, on high two to three hours (or until tender).
~Serve with cilantro and green onions.
